Ingredients

For the salad:

  • 5 oz cherry tomatoes halved
  • 1 avocado cubed
  • ½ bunch fresh basil thinly sliced
  • 1 lb cooked chicken or turkey chopped
  • 8 oz roasted red peppers chopped

For the dressing:

  • 2 Tbsp balsamic vinegar
  • 2 Tbsp extra virgin olive oil
  • sea salt to taste
  • black pepper to taste

Instructions

For the salad:

  • Combine all ingredients in a large salad bowl.
  • Divide all salad ingredients between plates.

For the dressing:

  • Whisk together vinegar, oil, salt, and pepper, drizzle on top of salad, and serve.
