  • 2 Tbsp avocado oil or pastured butter
  • sea salt to taste
  • ground black pepper to taste
  • 3 lbs pork chops thick-cut, bone-in
  • 1 small onion finely diced
  • 2 Tbsp minced garlic about 4 cloves
  • 1 tsp dried oregano
  • ½ tsp ground sage
  • 1 tsp dried basil
  • 1 Tbsp dried thyme


  • Heat a large cast iron skillet over medium heat for 1 minute.
  • Add oil (or butter) and heat until shimmery (or until stops foaming, for butter), about 1 minute.
  • Meanwhile, season pork chops generously on both sides with salt and pepper, then brown for 5 minutes per side.
  • Flip pork chops back to original side.
  • Reduce heat to medium-low, add onions, garlic and spices, and stir.
  • Flip pork chops one last time and cook on medium-low until pork chops are done (145°F at close to the bone), about 5-10 more minutes.
  • Remove from heat and let sit for 5 minutes, then serve.
