Sometimes, a Ketonian/low-carber wants a tasty, satisfying, high-fat beverage but does not want any coffee and/or caffeine. And, there are folks who are Keto (or want to be) and do not like coffee, or coffee/caffeine does not agree with them, so keto caffeinated beverages such as Bulletproof coffee, butter coffee/black tea and the like are out. But they still want all the great benefits of having a high-fat beverage in the morning to boost energy and mental clarity, ramp up fat burning, and extend their fasting time to take advantage of all the benefits of autophagy.

And I have just the thing! A keto-friendly, caffeine- and coffee-free vanilla steamer that is quick and easy to make, and oh-so-delicious.

Now, this recipe does use Stevia, and I know not everyone cares for it; if you’re not keen on Stevia, you can of course sub with another keto-friendly sweetener such as erythritol, xylitol, Better Than Sugar, monk fruit, etc. You’ll just have to play with the quantities to find what works best for you!

[A quick aside on all sweet-tasting foods and beverages: it is best to avoid them while in the initial weeks of keto-adaptation, and once you’re solidly in ketosis, to push them off until later in the day and after a decent high fat meal (ie. don’t have them first thing and/or on an empty stomach), since any sweet taste on the tongue stimulates insulin production, hunger, and carb cravings, slows or even halts fat burning, and stops autophagy.]

Now, for the recipe!


Keto-friendly Vanilla Steamer (no coffee, no caffeine)

  • 2 cups boiling water
  • 2 tablespoons pastured butter, such as Kerrygold or Organic Valley
  • 1 teaspoon vanilla powder
  • 1 tablespoon MCT oil
  • 1/4 tsp SweetLeaf Sweet Drops Vanilla Stevia
  • optional: tiny pinch of salt, or use salted butter; it enhances the flavor!

Add all ingredients to a blender (or use an immersion blender and large cup) and blend until creamy with a nice layer of foam on top. Makes 2 servings.
